Can I search photos by what’s in them?

Short answer
Yes. Turn on Settings › Library › Search photos by what’s in them. Peekaboo then finds photos by what they show and the words in them. Photos are read on this Mac, in the background, and never leave it. Text in screenshots and PDFs is searchable the same way.
